Time passes inexorably and one more year has passed in a sigh despite everything that has happened worldwide. We cannot distance ourselves from everything that happened with this pandemic, COVID-19 having its own chapter in the annals of history.

But despite everything, despite the setbacks that always show us the most negative side of things, we want to be positive and look at the coming new year with optimism, thinking like Don Quixote: “Trust time, which tends to give sweet solutions to many bitter difficulties”

At Talsa, a company that manufactures machines for the meat industry and has distributors all over the world, they have worked hard, expectations have been diminished and despite the difficulties, everything must continue. Health has become a priority, prudence is a value on the rise and many sectors have had to reinvent themselves, videoconferencing and teleworking have come to stay and science is on the march to provide us with a cure.

At Talsa, we have a thought of gratitude to all those people who have made it possible for the country to keep going, to those who have had the courage to show their optimistic and supportive side. Also, we would like to thank all  companies in permanent service as well as to the entire family that makes up our company for their work and their respect for the exceptionally established rules.

Despite everything, we are still here. This year’s Christmas parties are also going to be “otherwise” more intimate, more nostalgic but with the feeling of thinking that a farewell to this situation is coming, because, again, as Don Quixote would say:

“… as neither good nor evil are durable, the evil having lasted so long, good must be close, friend Sancho”

Machines are here to stay and don’t stop surprising us with new functionalities; robots seem to be here to take away hours of work and not only in our working time but also at home to save us time to devote to something else. In fact, in the kitchens there are more and more robots that prepare a delicious dish by only investing the time to throw in the ingredients; the machine takes charge of everything else.

The fact of presenting a freshly made dish, without any additives or additional heating, supposes love for a work well done. Never will a subcontractor be able to beat the aroma and offer the sensation of “eating with your eyes”; because in addition, the presentation is totally different for a dish served on a table and another one on a tray or wrapped in cellophane, taking freshness from the dish and reducing its tastiness.

Machines are fundamental to quality control. We all know that the budget of a dish should not be stretched to satisfy purposes other than paying for suppliers and labor.

No wonder that news about scams in this regard and protests from fathers and mothers to banish “catering” practices is becoming the general trend.

A good canteen with professionals in charge would result in labor contracts, in a better and controlled diet with studied menus and in the satisfaction of the user and those responsible for the institution. Machines are at the service of men, but we must not forget that we can also humanize the work of machines.
